Lettuce Wraps with Spicy Ground Beef

- 1 pound lean ground beef
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 cup chopped water chestnuts
- ½ cup chopped scallions (green parts only)
- 1 tablespoon low-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sriracha or other chili sauce (adjust to your spice preference)
- 1 teaspoon honey
- 1 head of butter lettuce or romaine lettuce, leaves separated
- Optional toppings: chopped peanuts, sesame seeds, extra sriracha
- Heat the vegetable oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned. Drain off any excess fat.
- Add the minced garlic to the skillet and cook for 1 minute until fragrant.
- Stir in the chopped water chestnuts and scallions. Cook for another 2-3 minutes.
- In a small bowl, whisk together the soy sauce, rice vinegar, sriracha, and honey. Pour this sauce over the ground beef mixture in the skillet. Cook, stirring, until the sauce has slightly thickened and coated the beef.
- Arrange the lettuce leaves on a serving platter.
- Spoon the spicy ground beef mixture into the lettuce cups.
- Garnish with chopped peanuts and sesame seeds, and serve with extra sriracha on the side, if desired.
